Sweet & Spicy Beet Hummus

Ingredients

  • 2-3 beets, roasted 
  • 1 (15 oz) can chickpeas, drained 
  • 2 Tbsp tahini 
  • 2 Tbsp olive oil 
  • 2 Tbsp lemon juice, freshly squeezed 
  • 1 Tbsp Pelicano 
  • Salt and pepper, to taste 

Directions

  • Preheat oven to 400 °F, remove stem and peel beets, scrub and wash beets under water until clean. 
  • Wrap beets in foil with a drizzle of olive oil, and roast in oven for ~30 minutes or until tender. Allow beets to cool to room temperature. 
  • Once cooled, combine all ingredients in food processor and blend until you have reached your desired consistency. 
  • Top with roasted pepitas for an extra crunch, and enjoy with your flock!
