Sweet & Spicy Beet Hummus

Ingredients:
- 2-3 beets, roasted
- 1 (15 oz) can chickpeas, drained
- 2 Tbsp tahini
- 2 Tbsp olive oil
- 2 Tbsp lemon juice, freshly squeezed
- 1 Tbsp Pelicano
- Salt and pepper, to taste
Directions:
- Preheat oven to 400 °F, remove stem and peel beets, scrub and wash beets under water until clean.
- Wrap beets in foil with a drizzle of olive oil, and roast in oven for ~30 minutes or until tender. Allow beets to cool to room temperature.
- Once cooled, combine all ingredients in food processor and blend until you have reached your desired consistency.
- Top with roasted pepitas for an extra crunch, and enjoy with your flock!
